Minestrone Soup
1lb of Jimmy Dean Sage Sausage
1 Tb olive oil
1 cup diced onion
1 clove garlic, minced
1 cup sliced carrots
1tsp crumbled basil
2 sm. zucchini, sliced
1 lg. can chopped tomato's, undrained
2 cans 103/4 oz beef broth + 3 beef cube bullion and 1 1/2 cup water
2 cups finely shredded cabbage
1 tsp salt
1/4 tsp pepper
1 can Great Northern (white) beans
chopped parsley for garnish
Brown sausage in oil. Add onion, garlic, and carrots and basil. Cook for 5 min. Add zuc. and tomatoes with liquid, cabbage and salt and pepper. Simmer for an hour and then add beans.

This is delicious! And gluten free! We had it for supper tonight - I used fresh tomatoes. Yum - thanks for sharing the recipe!
